Jerusalem Artichoke Soup

Jerusalem artichokes contain inulin, a substance that can cause stomach sensitivity in some people. If you are inulin sensitive, or you just want to be safe, make sure you take a digestive enzyme before indulging in any Jerusalem Artichoke recipe.

  1. Fry the bacon in a soup pot over medium-high heat.
  2. Add butter and sauté onions, artichokes, turnip and salt for 5-7 minutes.
  3. Add gradually 1 pt. of stock.
  4. Let all boil together until the vegetables are thoroughly cooked;
  5. Bring to a light boil, add the rest of the stock then reduce heat to low.
  6. then add 3 pt. more of stock; stir well;
  7. add pepper and salt to taste,
  8. blend vegetables until smooth, return to the soup; whisk it thoroughly
  9. Add 1 pt. of boiling milk.
  10. Boil for 10-15 minutes more.
  11. Sprinkle with freshly grated black pepper to serve.
