  1. Wipe the pears, remove the stems, quarter, and core.
  2. Cut the pears into small pieces.
  3. Add the sugar and the ginger.
  4. Let stand overnight In the morning, add the lemons cut in small pieces, rejecting the seeds, and cook until thick.
  5. Watch the mixture carefully lest it stick and scorch.
  6. Do not let it cook down so long that the rich amber color is lost.
  7. Remove the fruit when it becomes clear.
  8. Then concentrate the juice.
  9. An asbestos mat under the kettle will prevent sticking.
  10. When the juice is thick, replace the fruit, heat it thoroughly, pour into hot clean jars, seal, and store in a cool place.
