I found this gem of craft/recipe book for a steal the other day while at AC Moore. Paper Crafts Gourmet; authored by Paper Crafts Magazine Editors and Design.
This Recipe is meant to be almost fat-free; with the substitution of oil for apple sauce. Otherwise it follows your basic bread recipes with your:

And of course the Final Product with a twist; where it’s optional to add raisins – I added chopped Sun-Ripened Mixed Fruit as I had run out of the latter.
